Salah satu produk kedelai yang paling digemari dan terbukti memberi banyak manfaat bagi kesehatan dan gizi adalah tempe. Koro benguk dapat diolah menjadi tempe yang mempunyai kadar protein 0-14,12. Namun, meskipun di daerah tempat tempe benguk banyak dihasilkan, tempe kedelai jauh lebih dikenal dan disukai masyarakat, hal ini mungkin karena mutu organoleptik tempe benguk rendah. Peningkatan muru gizi dan mutu organoleptik tempe dapat dilakukan dengan cara mengkombinasikan kacang yang digunakan sebagai bahan baku. Percobaan pembuatan tempe campuran koro benguk dan kedelai telah dilakukan di Puskitbang Gizi, Bogor. Tempe campuran benguk dan kedelai dalam perbandingan berat 3:2 dan 1:1 menunjukkan mutu fisik, mutu organoleptik dan mutu gizi yang lebih baik daripada tempe kedelai maupun tempe benguk. Mutu protein kedua tempe campuran ini, masing-masing 4,5% dan 18,3% lebih tinggi daripada tempe banguk. Mutu fisik dan mutu organoleptik tempe campuran benguk dan beras dalam perbandingan berat 3:1 lebih baik daripada tempe benguk; sementara mutu gizi hampir sama. Mutu fisik tempe campuran benguk dan beras dalam perbandingan 3:2 dan 1:1 lebih baik daripada tempe benguk, tetapi mutu organoleptik dan mutu gizi lebih rendah.
